The delicious Andhra recipes, which is a combination of the South and Deccani, is apparently the spiciest and hottest of all Indian cuisine. Andhra recipe is largely vegetarian and the favorite food for coastal areas is seafood. Seafood has many non-vegetarian dishes which are spicy and unique in taste.
The fasten food, rice, is served with sambar, along with vegetables, green chillies and sufficient spices. The spicy chutneys and pickles of Andhra, especially mango and shrimp, are a hot favorite all over the country. Traditionally, Andhra meals is served in banana leafs Or small raised wooden seats.
Before serving a food, little water is sprinkled over the leaf then rice is served with a little helping of ghee. Usually the meal includes nearly five types of dishes, but a typical one, has to have the famous hot pickles, chutneys, powders etc. The spiciness of the meal is neutralized using curd.

Bommidala pulusu Preparation

Ingredients Bommidala pulusu :

  • bommidalu fish: 1/2 kg
  • oil: 4 tbsp
  • onions: choped 2 cups
  • tomatos: choped 1 cup
  • turmaric powder: 1/4 tsp
  • salt: as required
  • chillies: 5
  • red chilli powder: 1tbsp
  • dhania powder: 2 tsp
  • tamarind juice: 1 cup
  • ginger garlic paste: 1 tbsp
  • lemon juice: 2 tbsp
  • garam masala: 2 tsp
  • (grind dhania 2 tsp,chakka 1 inch, cloves 6, cardamums 3)
  • chakka: 1 inch
  • cloves: 6
  • cardamums: 3
  • coriander leaves
  • curry leaves
    Method for Bommidala pulusu :

  • add turmaric, salt, lemon juice to fish and mix well and keep aside for 10 mts.
  • heat oil in a pan and add chakka, cloves, cardamums and fry for 2 mts.
  • add choped onions and chillies and fry up to onions turns light brownish
  • add ginger garlic paste and fry for 5 mts
  • add curry leaves, choped tomatos, turmaric, salt, dhania powder, redchilli powder and cook covered for 5 mts with low flame
  • add tamarind juice and cook covered for 5 mts
  • add fish and cook for 10 mts
  • add garam masala and remove from heat
  • add coriander leaves

    Ulava Charu Preparation Tips

    ingredients:

    1 cup vulluvallu,lemon size tamarind,
    4 green chillys,one onion,
    1 tea spoon jeera,
    1 tea spoon mustard seeds,
    3 red chillys,if required
    1 tea spoon samber powder,
    corinader leaves and curry leaves,
    4 spoons oil,
    salt as required.

    Process of Preparing Ulava Charu:

    cook ulluvallu in a presure cooker.(add equal ampount of water to dal while cooking.)
    after two to three whistles turn of the stove
    in other container add oil and jeera,mustard seed and red chillys and add green chillys and chopped onion
    curry leaves and corinder.
    after 5 mints add tamrind water and allow for 5 mints and add the drain water from the cooked vulluvallu and take small amount of vullvallu which are cooked and grind to paste and add to samber.

    allow it to boil and add samber powder for flavour and turn off the flame.
    note:we use only little qantity of cooked vulluvallu even though u cook one full cup thats way u have to cook with high amount of water while cooking vulluvallu.left over vulluvallu can been consumed directly by adding some slat for taste for one cup of vulluvallu add 3and half to 4 cups water.

    1 c Bisquick
    2 c Carnation powder
    2 c Water
    1 1/2 c Sugar
    4 pods Cardamom
    few drops Rose water
    1/2 stick Butter (4 T)
    1/8 c Yogurt
    Milk
    Oil for frying
    Method for Gulab Jamuns:
    Heat butter and pour in a bowl. Add Bisquick, carnation powder andyogurt and blend together. Knead well adding milk if necessary. Make asmooth ball, cover and let rest (30 minutes?). Make 12-14 small balls.
    Heat the water, add sugar, bring to boil, add cardamom seeds and simmer. Boil, then simmer to reduce the water by half. Heat the oil until hotand fry the balls to a golden brown or until they are darkbrown---almost black.
